The Secret to Delicious Raw Chocolate Desserts :)

Before resting on the 7th day, God decided to create one more thing...  
The avocado.  
Ingredients
  • 1.5 cups of nuts (preferable cashews or almonds)
  • 4 ripe avocados
  • 1/2 cup of coconut oil
  • 1-1.5 cups of honey
  • 3/4 cup of raw cacao powder
You have to admit, it is a unique fruit. Not to mention, quite an enormous seed for such a small piece of produce. It's not really juicy or crisp like most other fruits. There is a short ripening window before going bad and (have you ever thought of this...) it is one of the few fruits we always (unless I'm missing out on something) eat raw.  

For a long time the avocado was stamped as a "fatty" food and not the best choice for a healthy eating lifestyle. While it is high in fat and calories, it has "good" fats (monounsaturated fats) that benefit your cholestorol levels and overall health when eaten in moderation.

One of the most magical (and sometimes secret) properties of the avocado is it's ability to become invisible. Yep, that's right. I can make that light green, bland-tasting avocado disappear and transform into something completely different right before your eyes! 

Now, may I interest you in some raw chocolate mousse pie?

It's hard to believe this pie is diary-free, egg-free and flour-free.  The secret to this recipe is the avocado. It's velvety texture and lack of strong flavor allows it to take enhance enhance other ingredients while also supplementing as a thickener. 

Every single person I have made try this pie has refused to believe the main ingredient was avocado. 

Try it for yourself, you will be amazed!
Prepare the Crust
  1. Crush the nuts in a food processor or coffee grinder.  Allow them to be crushed into very small pieces or almost a grainy-type flour.
  2. Add just enough (start with a tablespoon) coconut oil to allow the nuts to stick together and be able to spread into a thick crust.
  3. Spread the nuts on the botton of the pie dish, making a small lip around the outter edges
  4. Put this in the freezer to harden

Try to crush the nuts a little smaller than shown in this picture. I didn't crush then quite enough when I made this batch.
Prepare the Pie Filling
  1. Carve out the insides of the avocados and mash with a fork in a large bowl
  2. Add the remaining ingredients (caoca powder, honey, coconut oil) and stir to blend together well
  3. Do a quick taste-test, to make sure it's chocolately and sweet enough.  Feel free to add more honey to sweeten, or more cacao powder to richen.
Putting it All Together!
  1. Use a spatula to pour this filling into a blender, and blend until smooth (you want most of the smaller avocado chunks to be blended as much as possible.
  2. Take the crust out of the freezer, pour the pie filling on top.
  3. Place the entire pie in the freezer for about 3-4 hours, then keep in refridgerator.

Note:  Since coconut oil melts to a liquid-form just above room temperature, it's best to keep the pie in the refridgerator at all times so it maintains it's beautiful structure.
