Note: You must love tuna in order to appreciate this post :)
I'm lucky to live close enough to work where I can come home most days for lunch. On this particular day, I came home and to my disappointment, there was nothing to eat! The fridge was empty and my only option would have been a protein shake. Normally, that would be okay to hold me over until dinner, but I really needed real food. Hoping to find a Cliff Bar or something of the sorts, I check the pantry...nothing. Then I spotted a can of tuna fish. "Okay."
I remembered we had a head of farm fresh green cabbage in the fridge and some shredded carrots stared me in face too....voila, the tuna coleslaw salad was born.
It was a perfect blend of fish-protein and vegetables, and just enough food for a quick lunch.
Here's the recipe:
1 can of tuna fish
1/4 cup of shredded carrots
3/4 cup of chopped green cabbage
1 tbsp homemade dressing (recipe below)
Salt and pepper to taste
Optional: sliced almonds
Mix all ingredients together, and eat!
Julie's Homemade Dressing
This recipe varies depending on how much you like of each ingredient.
You'll want a 1:1 ratio of apple cider vinegar and olive oil.
Mix together with the following ingredients:
Juice from one small orange
1 tsp of garlic powder
Dash* of dried sage
Dash* of dried basil
Dash* of dried rosemary
Dash* of dried thyme
Small pinch of turmeric
Then...shake and pour!
*Dash - Generally less than a 1/4 tsp, but measure based on personal taste.
