About two years ago I bought an industrial size dehydrator. Scott and I were pursuing a raw food lifestyle, and being able to dry fruits and vegetables was a must. Currently we do not limit ourselves to raw food (this is very difficult for non-vegetarians), but we do recognize the benefits of raw and incorporate it frequently. After we started cooking most of our meals again, the dehydrator took a back seat for a while. Well for the past couple months it's been on our counter-top and using precious electricity!
I present to you, the very easy and simple...dried apples. I dried three different types: Granny Smith, Delicious and Honey Crisp. These are by no means local...our Wyoming wind does not allow apple trees to take deep enough root to survive. This has always been very sad for me because I come from a place where apple-picking is like putting pants on in the morning...you just do it.
Some tips for dehydrating apples.
1. Dry for at least 24 hours. This ensures you've extracted most of the moisture out of the fruit, giving it a longer lifespan and more flavor.
2. It's better to slice them thicker than you may think, rather than on the thin side. Slicing them too thin will make parts of the apple meat stick to the tray and you won't get a nice looking "chip".
3. Once the apples are sliced, spray or rub them with lemon juice. This will prevent them from turning brown in spots and oxidizing. I did not do this, but will next time.
4. You can season with cinnamon, clove or sweetener to give added flavor. Do this before you place them in the dehydrator, while they are still wet.
